If you are looking for a fresh spin on your usual dinner routine, these pesto chicken meatballs are a real winner. They use simple ingredients to create a juicy meatball that tastes like a gourmet meal without the extra effort.

Because we bake these instead of frying them, they are much easier to manage on a busy weeknight. I love making a double batch so I have easy protein ready to go for salads or lunch wraps throughout the week.

Ingredients

  • 1 pound ground chicken
  • 1/3 cup prepared basil pesto
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

In a large mixing bowl, combine the ground chicken, pesto, Parmesan cheese, breadcrumbs, egg, salt, and pepper.

  3. 3

Mix everything together gently with your hands until just combined, being careful not to overwork the meat.

  4. 4

Roll the mixture into golf ball sized meatballs and place them on your prepared baking sheet.

  5. 5

Bake for 18 to 20 minutes or until the meatballs are golden brown and cooked through.

  6. 6

Serve warm with a side of pasta, roasted vegetables, or over a fresh salad.

๐Ÿ’ก Tips

These meatballs freeze beautifully for up to three months. If you have leftovers, keep them in an airtight container in the fridge for up to four days and reheat them in the microwave or a warm skillet.
