There is something so comforting about a good chicken salad. It is the kind of recipe that tastes even better after it has had a chance to chill in the fridge for a few hours. I love serving this on a toasted croissant or just piling it over fresh salad greens when I want something lighter.

My favorite trick for this recipe is to use rotisserie chicken from the grocery store. It saves so much time and keeps the meat tender and juicy. Just shred it while it is still slightly warm so it absorbs all that delicious dressing.

Ingredients

  • 3 cups cooked chicken breast, shredded or diced
  • 2 stalks celery, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 cup red onion, finely minced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup halved grapes or diced apples
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. 1

In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and pepper until smooth.

  2. 2

Add the shredded chicken, chopped celery, red onion, and fruit to the bowl.

  3. 3

Fold everything together gently until the chicken is well coated in the dressing.

  4. 4

Taste the salad and adjust the salt or pepper if you feel it needs a little more.

  5. 5

Cover the bowl and refrigerate for at least thirty minutes before serving to let the flavors meld together.

๐Ÿ’ก Tips

Store this chicken salad in an airtight container in the fridge for up to three days. It is best to add the grapes or apples right before serving if you want them to stay crisp. Try serving it in lettuce wraps if you want a gluten free meal.
