BBQ Chicken Foil Packs
These easy BBQ chicken foil packs are a complete meal with chicken, potatoes, and fresh vegetables all cooked together in a tangy sauce.

By wrapping everything in foil, the chicken stays tender while the potatoes and veggies soak up all the smoky sauce. It is a fantastic option for busy weeknights when you want something satisfying but simple.
I love that this recipe works just as well in the oven as it does on the grill. If you are cooking inside, just pop the packets onto a baking sheet and let the oven do the work. It is a crowd pleasing meal that tastes like a backyard cookout no matter the time of year.
Ingredients
- 1.5 pounds boneless skinless chicken thighs, cut into 1 to 1.5 inch pieces
- 3/4 cup BBQ sauce, divided
- 1 tablespoon vegetable oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound Yukon Gold potatoes, cut into 1 inch chunks
- 1 bell pepper, chopped
- 1 red onion, chopped
Instructions

Preheat your grill to medium high heat or preheat your oven to 425 degrees Fahrenheit.

In a large bowl, combine the chicken pieces, potatoes, bell pepper, and red onion.

Drizzle the oil over the mixture and sprinkle with the smoked paprika, garlic powder, onion powder, salt, and pepper. Add half of the BBQ sauce and toss everything together until evenly coated.

Lay out four large sheets of heavy duty aluminum foil. Divide the chicken and vegetable mixture evenly among the center of each sheet.

Bring the long sides of the foil together and fold them over to seal. Fold up the ends to create a secure packet, leaving a little room inside for steam to circulate.

If grilling, place the packets on the grill and cook for 20 to 25 minutes. If using an oven, place them on a sheet pan and bake for 25 to 30 minutes.

Carefully open the packets, brush with the remaining BBQ sauce, and serve warm.

Store any leftovers in an airtight container in the fridge for up to three days. When serving, be very careful opening the foil because the hot steam trapped inside can burn, so I recommend opening them away from your face.
