Who says you cannot have cake for breakfast? This recipe is one of my favorite ways to start the day because it tastes like a treat but keeps me full until lunch. It takes the familiar flavors of fluffy pancakes and turns them into a simple baked dish that everyone at the table will love.

Since this cake bakes all at once, you do not have to stand by the stove flipping individual pancakes. My best tip is to use fresh blueberries if they are in season, but frozen ones work perfectly well too. Just toss them in a little bit of flour first so they do not sink to the bottom while baking.

Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 cup Greek yogurt
  • 1/2 cup milk of your choice
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

    Preheat your oven to 350 degrees Fahrenheit and grease a small baking dish or cake pan.

    In a large mixing bowl, combine the oat flour, protein powder, baking powder, and cinnamon.

    Add the Greek yogurt, milk, egg, and vanilla extract to the dry ingredients and stir until the batter is smooth.

    Gently fold in most of the blueberries, reserving a few to sprinkle on top.

    Pour the batter into your prepared pan and scatter the remaining blueberries over the surface.

    Bake for 20 to 25 minutes or until the top is set and a toothpick inserted into the center comes out clean.

    Let it cool for a few minutes before slicing and serving.

Serve each slice with a dollop of extra yogurt and a drizzle of pure maple syrup. If you have leftovers, you can wrap individual slices and keep them in the freezer for a quick grab and go breakfast later in the week.
