Brown Butter Churro Cookies

- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 tablespoon vanilla extract
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup granulated sugar mixed with 2 tablespoons cinnamon for rolling

In a large bowl, whisk together the brown butter, brown sugar, and 1/2 cup of granulated sugar until smooth.

Add the egg, egg yolk, and vanilla extract to the butter mixture and stir well.

Scoop the dough into balls and roll each one in the cinnamon sugar mixture until well coated.
