Summer is never complete without a refreshing frozen treat to beat the heat. These bars take everything you love about a classic Key lime pie and turn it into a handheld snack that stays cool in your freezer. The bright citrus flavor is so wonderful when paired with a little bit of chocolate.

Making these is quite simple, and they are always a huge hit at backyard parties. Make sure to give them plenty of time to freeze solid before you try to dip them, as this makes the process much easier and keeps the bars neat.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons melted unsalted butter
  • 2 cans (14 ounces each) sweetened condensed milk
  • 1 cup Key lime juice
  • 4 large egg yolks
  • 2 cups semi sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

    Preheat your oven to 350 degrees and line an 8 inch square baking pan with parchment paper.

    Combine the graham cracker crumbs, sugar, and melted butter in a small bowl until well combined.

    Press the crumb mixture firmly into the bottom of the prepared pan and bake for 10 minutes.

    While the crust cools, whisk together the egg yolks and sweetened condensed milk in a large bowl.

    Slowly stir in the Key lime juice until the mixture thickens slightly.

    Pour the lime filling over the crust and bake for 15 minutes or until the center is set.

    Let the pan cool to room temperature, then place it in the freezer for at least 4 hours or overnight.

    Once frozen, lift the parchment paper to remove the block and cut it into 12 bars.

    Melt the chocolate chips and coconut oil in 30 second intervals in the microwave until smooth.

    Dip the bottom or half of each frozen bar into the chocolate, then place them on a tray to set in the freezer for another 20 minutes.

You can store these treats in the freezer for up to two weeks in a sealed container. If you cannot find Key limes, you can use a mix of regular lime juice and a splash of lemon juice for a similar tartness.
