A good Cobb salad is one of my favorite ways to turn a simple bowl of greens into a satisfying lunch or dinner. It is famous for its tidy rows of colorful toppings, which look beautiful on a serving platter and make sure you get a little bit of everything in every single bite.

For the best results, try to keep your toppings about the same size as your chopped lettuce. This makes it much easier to toss everything together right before you eat. Don't be afraid to make the dressing ahead of time so the flavors have a chance to settle.

Ingredients

  • 4 cups chopped romaine lettuce
  • 2 hard boiled eggs, chopped
  • 1 cooked chicken breast, diced
  • 4 slices bacon, cooked and crumbled
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup crumbled blue cheese
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

    Whisk the olive oil, red wine vinegar, Dijon mustard, salt, and pepper in a small bowl until the dressing is smooth.

    Spread the chopped romaine lettuce across a large platter or into individual serving bowls.

    Arrange the chicken, eggs, bacon, avocado, tomatoes, onion, and blue cheese in neat rows on top of the lettuce.

    Drizzle the dressing over the salad just before serving, or keep it on the side for people to add as they like.

Store any leftover dressing in a glass jar in the fridge for up to a week. If you want to make this ahead of time, keep the avocado separate until the very last second so it stays fresh and green.
