There is nothing quite like the taste of fresh vegetables when they are at their peak during the warm summer months. This simple salad is a favorite in my house because it is bright, colorful, and goes perfectly with just about anything you throw on the grill.

My top tip for this salad is to make sure your vegetables are ice cold before you chop them. It makes every bite feel extra crisp and keeps the greens from wilting too quickly once the dressing is added.

Ingredients

  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 large cucumber sliced
  • 1 bell pepper chopped
  • 1/2 red onion thinly sliced
  • 1/4 cup crumbled feta cheese
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • Salt and black pepper to taste

Instructions

    Wash and dry all your fresh vegetables thoroughly.

    Place the chopped romaine lettuce into a large serving bowl.
