Stuffed peppers are a true classic for a reason. They bring together juicy meat, fluffy rice, and a rich tomato sauce inside a tender pepper shell. This meal is a favorite in my house because it is so satisfying and looks beautiful on the dinner plate.

I like to prep these ahead of time on a Sunday. If you have extra time, try roasting the peppers for a few minutes before stuffing them to ensure they get perfectly soft every single time.

Ingredients

  • 4 large bell peppers, tops removed and seeded
  • 1 pound ground beef
  • 1/2 pound mild Italian sausage, casings removed
  • 2 cups cooked white rice
  • 1 can diced tomatoes, drained
  • 1 cup marinara sauce
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

    Preheat your oven to 375 degrees Fahrenheit.

    Bring a large pot of water to a boil and blanch the hollowed peppers for about 3 minutes, then drain them well.

    In a large skillet over medium heat, cook the ground beef and Italian sausage until browned, then drain off the excess fat.

    Add the onion and garlic to the meat, cooking until the onion is soft.

    Stir in the cooked rice, diced tomatoes, marinara sauce, and oregano, seasoning with salt and pepper.

    Stand the bell peppers upright in a baking dish and divide the meat mixture evenly among them.

    Cover the dish with foil and bake for 30 minutes.

    Remove the foil, sprinkle the tops with mozzarella cheese, and bake for another 10 minutes until the cheese is melted and bubbly.

These keep very well in the fridge for up to three days in an airtight container. You can reheat them in the microwave or oven for a quick lunch. Serve them with a side of crusty bread or a fresh green salad to round out the meal.
