This pesto pasta is one of my favorite go to dinners when I need something fast that everyone at the table will enjoy. It is incredibly simple to pull together on a busy weeknight using just a few quality ingredients.

I love to blister the tomatoes just until they start to pop so they stay juicy and sweet. Serving this with a big ball of burrata torn over the top makes it feel special without any extra fuss.

Ingredients

  • 1 pound pasta of your choice
  • 1 pint cherry tomatoes
  • 1/2 cup basil pesto
  • 1 ball fresh burrata cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh Parmesan cheese for serving
  • Balsamic glaze for drizzling, optional

Instructions

    Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente.

    While the pasta cooks, heat the olive oil in a large skillet over medium heat.

    Add the cherry tomatoes to the skillet and cook them for about 5 to 7 minutes until they are blistered and just beginning to burst.

    Drain the cooked pasta and add it directly into the skillet with the tomatoes.

    Remove the pan from the heat and stir in the pesto until the pasta is evenly coated.

    Transfer the pasta to a serving bowl and top with the burrata cheese broken into pieces.

    Season with salt and pepper to taste and add a sprinkle of Parmesan or a drizzle of balsamic glaze if desired.

๐Ÿ’ก Tips

Store any leftover pasta in an airtight container in the fridge for up to two days. If you want to make this a heartier meal, you can easily stir in some grilled chicken or cooked shrimp before adding the burrata.
