There is something so satisfying about a Caesar salad made from scratch. The combination of fresh, crunchy romaine with a zesty, rich dressing is my husband's absolute favorite side dish, and I find myself making it almost every single week.

Using an egg at room temperature really helps the dressing come together perfectly. If you want a little extra zing, feel free to add an extra squeeze of fresh lemon juice right before serving.

Ingredients

  • 2 large heads of romaine lettuce, chopped and washed
  • 1 cup garlic croutons
  • 1/2 cup freshly grated Parmesan cheese
  • 1 room temperature egg
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 anchovy fillets, minced
  • 1 tablespoon capers, finely chopped
  • 1/2 cup olive oil
  • Salt and black pepper to taste

Instructions

    Combine the egg, lemon juice, Dijon mustard, Worcestershire sauce, anchovy fillets, and capers in a blender or food processor.

    Blend the mixture until smooth, then slowly drizzle in the olive oil while the machine is running until the dressing is thick and creamy.

    Place the chopped romaine lettuce into a large serving bowl.

    Drizzle the dressing over the lettuce and toss well to coat every leaf.

    Add the croutons and grated Parmesan cheese, then give it one final gentle toss before serving.

Store the dressing in a glass jar in the fridge for up to three days. I recommend keeping the croutons on the side until the very last second so they stay nice and crunchy. This salad pairs beautifully with grilled steak or a simple roasted chicken.
