There is nothing quite like the taste of ripe tomatoes and fresh basil on crispy toasted bread. This Italian classic is one of my favorite things to make during the summer when the garden is full of produce, but it works perfectly as an appetizer for any dinner party throughout the year.

The secret to a great bruschetta is keeping things simple. Since there are so few ingredients, make sure you pick the best quality bread, olive oil, and tomatoes you can find. It comes together in just twenty minutes, leaving you more time to enjoy with your guests.

Ingredients

  • 1 loaf sourdough or ciabatta bread, sliced into half inch pieces
  • 4 medium tomatoes, seeded and diced
  • 1 cup yellow cherry tomatoes, quartered
  • 2 tablespoons red onion, finely diced
  • 1/3 cup extra virgin olive oil, plus more for brushing bread
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 cup fresh basil leaves, torn by hand
  • 2 cloves garlic, peeled
  • Salt and black pepper to taste
  • Balsamic glaze for garnish

Instructions

    In a mixing bowl, combine the diced tomatoes, yellow cherry tomatoes, and red onion.

    Stir in the olive oil, red wine vinegar, dried oregano, salt, and pepper. Let this mixture sit for 15 minutes to allow the flavors to blend.

    Brush both sides of the bread slices with a little olive oil.

    Toast the bread on a hot grill, in a skillet, or in your toaster until golden and crispy.

    Rub a peeled garlic clove directly onto the warm, toasted bread for a fragrant, mild flavor.

    Gently fold the fresh torn basil into the tomato mixture.

    Spoon the tomato topping onto each piece of toasted bread and finish with a small drizzle of balsamic glaze before serving.

๐Ÿ’ก Tips

You can store the tomato mixture in the refrigerator for up to a day, but wait to top your bread until right before serving to keep the crust nice and crunchy. If you have extra basil, use it as a fresh garnish on the serving platter to make the dish pop.
