Classic Three Bean Salad
A refreshing and hearty side dish that tastes even better after it has had time to chill in the fridge.
dailyrecipesbook.comThis classic salad is a staple at my family gatherings because it is so easy to pull together. The mix of tender beans and crisp vegetables creates a wonderful texture that everyone seems to enjoy.
My favorite thing about this recipe is that it tastes even better the next day. If you have the time, let it sit in the refrigerator for a few hours before serving so the dressing can soak into the beans.
Ingredients
- 1 can green beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can garbanzo beans, drained and rinsed
- 1/2 cup red onion, finely chopped
- 1/2 cup celery, diced
- 1/3 cup olive oil
- 1/3 cup apple cider vinegar
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- 1
Add the green beans, kidney beans, and garbanzo beans to a large mixing bowl.
- 2
Stir in the chopped red onion and diced celery.
- 3
In a separate small jar or bowl, whisk together the olive oil, vinegar, sugar, salt, and pepper until the sugar dissolves.
- 4
Pour the dressing over the bean mixture and toss well to coat everything evenly.
- 5
Cover the bowl and place it in the refrigerator for at least two hours before serving to let the flavors blend.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to four days. If you want a bit more color, feel free to add some chopped fresh parsley or diced bell peppers before serving.
