There is something so special about a classic creamy cucumber salad. It reminds me of summer picnics and family gatherings where everyone reached for a second helping of this crisp, cooling side dish.

My favorite way to make this is to slice the cucumbers quite thin so they soak up just enough of the dressing. If you have extra time, let the salad sit in the fridge for about thirty minutes before you serve it because the flavors meld together beautifully.

Ingredients

  • 2 large English cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup sour cream
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Place your sliced cucumbers and red onions in a large mixing bowl.

  2. 2

In a separate small bowl, whisk together the sour cream, vinegar, sugar, dill, salt, and pepper until smooth.

  3. 3

Pour the dressing over the cucumbers and onions.

  4. 4

Toss everything gently until the vegetables are evenly coated.

  5. 5

Serve immediately or cover and chill in the refrigerator for at least thirty minutes for the best flavor.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. Keep in mind that the cucumbers will release more water as they sit, so give the salad a quick stir before serving again.
