I love keeping this salad simple with a mix of crunchy lettuce and a bright vinaigrette. You can easily add whatever extra vegetables you have in the fridge to make it your own.
Ingredients
- 1 head of romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon dijon mustard
- Salt and black pepper to taste
