These chicken bites are a huge favorite at my house because they have that perfect crunch without needing a deep fryer. The secret is using crushed cornflakes for the coating, which stays crispy even after you toss them in the delicious honey BBQ glaze. It is the best way to get that fried texture while keeping things simple in the kitchen.

I love serving these for family movie nights or when friends come over for the big game. My best tip is to use a wire rack on your baking sheet so the heat can get under the chicken, making sure every single piece is crispy all the way around without any soggy spots.

Ingredients

  • 1.5 pounds boneless skinless chicken breasts or thighs, cut into 1 inch pieces
  • 1 tablespoon BBQ seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all purpose flour
  • 1/2 cup buttermilk
  • 1 large egg
  • 3 cups cornflakes, crushed into coarse crumbs
  • 2 tablespoons vegetable oil
  • 1 cup of your favorite BBQ sauce
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon hot sauce, optional

Instructions

    Preheat your oven to 400 degrees. Line a large baking sheet with foil for easy cleanup and set a wire cooling rack on top, then lightly spray the rack with nonstick cooking spray.

    Place your chicken pieces in a bowl and toss them with the BBQ seasoning, salt, and pepper until they are evenly coated.

    In a shallow bowl, mix the crushed cornflake crumbs with the vegetable oil until the crumbs are lightly moistened.

    Set up two more shallow bowls, one with the flour and another with the buttermilk and egg whisked together until smooth.

    Working in batches, coat each piece of chicken in the flour, dip it into the buttermilk mixture, and then press it firmly into the cornflake crumbs until fully covered.

    Place the chicken pieces on the wire rack in a single layer, making sure they do not touch each other.

    Bake for 15 to 20 minutes or until the chicken is cooked through and the coating is golden brown and crunchy.

    While the chicken is in the oven, whisk the BBQ sauce, honey, vinegar, and hot sauce in a small saucepan over medium heat until the sauce is warm and bubbly.

💡 Tips

You can store any leftovers in an airtight container in the fridge for up to three days. To get them crispy again, just pop them back in the oven or an air fryer for a few minutes instead of using the microwave. These also work great served over a fresh garden salad for a quick lunch.
