If you think you do not like brussel sprouts, this recipe might just change your mind. Thinly shaving them turns them into a crunchy, delicious base for a salad that stays crisp even after you dress it.

I love making this for family dinners or bringing it to potlucks because it looks beautiful on the table. My favorite tip is to use a mandoline to get the sprouts extra thin so they soak up all that lovely dressing.

Ingredients

  • 1 pound fresh brussel sprouts, trimmed and thinly shaved
  • 1 crisp apple, diced
  • 1/2 cup candied walnuts or pecans
  • 1/3 cup dried cranberries
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and black pepper to taste

    Trim the ends off the brussel sprouts and remove any tough outer leaves, then slice them into very thin shreds using a knife or a mandoline.
