This Asian slaw has become a regular at my dinner table because it is so crisp and refreshing. It is packed with crunchy vegetables and tossed in a creamy, tangy dressing that everyone seems to love.

I find that this salad tastes best if you let it sit for about twenty minutes before serving. This allows the cabbage to soften just a little while soaking up all those delicious flavors from the dressing.

Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced green onions
  • 1/2 cup chopped cilantro
  • 1/3 cup mayonnaise
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1 clove garlic, minced

Instructions

  1. 1

In a large mixing bowl, combine the green cabbage, purple cabbage, carrots, green onions, and cilantro.

  2. 2

In a separate small bowl, whisk together the mayonnaise, rice vinegar, soy sauce, honey, sesame oil, and minced garlic until smooth.

  3. 3

Pour the dressing over the cabbage mixture.

  4. 4

Toss everything together until the vegetables are evenly coated.

  5. 5

Let the slaw sit for twenty minutes in the refrigerator before serving to help the flavors blend together.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. This slaw is excellent served alongside grilled chicken or fish for a light and healthy dinner.
