Crunchy Asian Slaw with Ginger Dressing

It is one of my favorite recipes because it stays crunchy in the fridge for a few days. If you want a bit of extra texture, try adding some toasted sesame seeds or crushed peanuts right before you serve it.
Ingredients
- 4 cups shredded green cabbage
- 1 cup shredded carrots
- 1/2 cup sliced green onions
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon honey
- 1 teaspoon fresh grated ginger
- 1 clove minced garlic
Instructions

Combine the shredded cabbage, carrots, and green onions in a large mixing bowl.

In a separate small jar or bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic until the dressing is smooth.

Pour the dressing over the vegetables and toss everything well until the slaw is evenly coated.

Let the slaw sit for at least fifteen minutes before serving so the flavors have a chance to meld together.

Store any leftovers in an airtight container in the fridge for up to three days. It tastes even better the next day after the flavors settle. You can add grilled chicken or tofu to turn this side dish into a light lunch.
