Green cabbage is such a wonderful ingredient that often gets overlooked in favor of flashier summer vegetables. I love how it stays perfectly crunchy even after being tossed in a flavorful dressing, making it a reliable choice for outdoor gatherings or busy weeknight meals.

My top tip for this salad is to shred the cabbage as thinly as you possibly can. The thinner the strips, the better they soak up the dressing and the nicer the texture is when you take a bite.

Ingredients

  • 1 medium head of green cabbage, shredded thin
  • 2 large carrots, grated
  • 3 green onions, thinly sliced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon celery seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Place your finely shredded cabbage, grated carrots, and sliced green onions into a large mixing bowl.

  2. 2

In a separate small jar or bowl, whisk together the vinegar, honey, olive oil, celery seeds, salt, and pepper until the dressing is smooth.

  3. 3

Pour the dressing over the cabbage mixture and toss everything together well so the vegetables are evenly coated.

  4. 4

Let the salad sit in the refrigerator for at least thirty minutes before serving to allow the flavors to blend and the cabbage to soften just a little.

  5. 5

Give it a final stir right before you put it on the table.

๐Ÿ’ก Tips

This salad keeps well in the fridge for up to two days, though it is best enjoyed on the first day while the cabbage is still very crisp. Serve it alongside grilled chicken or burgers for a complete meal.
