This salad is a total crowd pleaser at summer barbecues and potlucks. Everyone loves the contrast between the tender cabbage and the toasted, crunchy ramen noodles that provide such a satisfying bite.

My top tip for this recipe is to wait until just before serving to add the toasted ramen and almonds. Keeping them separate until the last second ensures they stay perfectly crunchy instead of getting soggy in the dressing.

Ingredients

  • 2 packages ramen noodles, flavor packets discarded
  • 1/2 cup slivered almonds
  • 1/2 cup sesame seeds
  • 1 head green cabbage, shredded
  • 6 green onions, thinly sliced
  • 1/2 cup vegetable oil
  • 1/3 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 teaspoon soy sauce
  • 1/2 teaspoon black pepper

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit.

  2. 2

Crush the dry ramen noodles into small pieces and spread them on a baking sheet along with the slivered almonds and sesame seeds.

  3. 3

Toast the mixture in the oven for about 10 minutes, watching carefully so it turns golden brown without burning.

  4. 4

In a large mixing bowl, combine the shredded cabbage and sliced green onions.

  5. 5

In a separate small jar or bowl, whisk together the vegetable oil, apple cider vinegar, sugar, soy sauce, and black pepper until the sugar dissolves.

  6. 6

Pour the dressing over the cabbage mixture and toss well to coat everything evenly.

  7. 7

Just before you are ready to eat, sprinkle the toasted ramen and nut mixture over the salad and toss one last time.

๐Ÿ’ก Tips

If you want to make this ahead of time, mix the cabbage and dressing in the morning but keep the crunchy topping in an airtight container until you are ready to serve. Leftovers stay freshest if you store the components separately in the fridge.
