These cold sesame noodles are super simple to whip up, making them a lifesaver on busy weeknights or when you just want something delicious without a lot of fuss. They're budget friendly too, using everyday ingredients you might already have in your pantry.

What makes these noodles so great is the balance of flavors and textures. You get the satisfying chew of the noodles, the crunch from the fresh vegetables, and a dressing that's nutty, savory, and has just a hint of spice. Ingredients

  • 8 ounces spaghetti
  • 1 red bell pepper, thinly sliced
  • 1/2 cup grape tomatoes, halved
  • 1/4 cup fresh basil, minced
  • 3 green onions, sliced
  • 1 lime, cut into wedges
  • 1 tablespoon soy sauce
  • 2 tablespoons toasted sesame oil
  • 1/2 tablespoon sriracha (or more, to taste)
  • 1 tablespoon sesame seeds

Instructions

    Get a pot of water boiling for your spaghetti. While it's heating up, go ahead and chop your veggies. Slice the red bell pepper thinly, halve the grape tomatoes, mince your fresh basil, and slice the green onions. Cut your lime into wedges too.

    Once the water is boiling, add your spaghetti and cook it according to package directions until it's al dente. We don't want it mushy here!

    Drain the cooked spaghetti and rinse it really well with cold water. This stops the cooking and cools it down quickly for the salad.

    In a big mixing bowl, combine the drained spaghetti with the sliced red bell pepper, halved tomatoes, minced basil, and sliced green onions.

    Now, make the dressing. Add the soy sauce, toasted sesame oil, sriracha, and sesame seeds to the bowl with the noodles and veggies.

    Toss everything together gently until all the noodles and veggies are nicely coated in the dressing.

    Cover the bowl and pop it in the refrigerator to chill for at least 15 minutes. This lets all those wonderful flavors get to know each other.
