This Thai peanut dressing is a staple in my kitchen because it comes together in just a few minutes with simple pantry items. It has the perfect balance of salty, sweet, and tangy flavors that go with just about anything.

My best tip is to use creamy peanut butter for the best texture, but you can use crunchy if you like a bit of extra texture. If your peanut butter is very stiff, add a tiny splash of warm water to help it blend more smoothly.

Ingredients

  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 2 to 4 tablespoons warm water, to reach desired consistency

Instructions

  1. 1

Place the peanut butter, soy sauce, honey, vinegar, lime juice, ginger, and garlic into a small bowl or a glass jar.

  2. 2

Whisk the ingredients together with a fork or shake the jar until the mixture is well combined.

  3. 3

Add the warm water one tablespoon at a time, whisking or shaking between additions, until the dressing reaches your favorite consistency.

  4. 4

Taste the dressing and adjust the ingredients if you prefer it saltier, sweeter, or more acidic.

  5. 5

Serve immediately over your favorite greens or store it for later.

๐Ÿ’ก Tips

Store this dressing in a sealed glass jar in the fridge for up to one week. If it thickens up while chilled, just add a splash of warm water and stir well before serving. It works wonderfully as a dip for fresh spring rolls or as a sauce for cold noodle salads.
