This meal is my go to when I need dinner on the table in a hurry. It combines savory chicken with slippery noodles in a sauce that hits all the right notes of sweet and nutty sesame flavor.

I love keeping this recipe simple so it fits into even the busiest weeknight schedule. If you want a bit more crunch, feel free to toss in some sliced snap peas or shredded carrots right at the end of the cooking process.

Ingredients

  • 2 chicken breasts, cut into bite sized pieces
  • 8 ounces of noodles, such as spaghetti or ramen
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. 1

Cook the noodles according to the package directions, then drain and set them aside.

  2. 2

In a small bowl, whisk together the soy sauce, honey, sesame oil, vinegar, garlic, and ginger to create the sauce.

  3. 3

Heat a large skillet over medium high heat with a splash of oil.

  4. 4

Add the chicken pieces to the skillet and cook until they are golden brown and cooked through.

  5. 5

Pour the prepared sauce into the pan with the chicken and let it bubble for a minute until it thickens slightly.

  6. 6

Toss the cooked noodles into the pan with the chicken and sauce until everything is well coated.

  7. 7

Serve immediately topped with sesame seeds and fresh green onions.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat this in the microwave with a small splash of water to keep the noodles from drying out.
