Tabouli is a classic salad that truly celebrates fresh ingredients. It is light, healthy, and incredibly vibrant thanks to the generous amount of parsley and mint used in every bite. People love it because it tastes just as good the next day after the flavors have had time to mingle.

My best tip for this recipe is to make sure you wash and dry your parsley very well before chopping it. If the leaves are damp, the dressing will not coat them properly and the salad can get a bit soggy. Enjoy this as a side dish or with some warm pita bread.

Ingredients

  • 1/2 cup fine bulgur wheat
  • 1 cup boiling water
  • 2 cups fresh parsley, finely chopped
  • 1/2 cup fresh mint, finely chopped
  • 3 ripe tomatoes, diced
  • 1 cucumber, finely diced
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • Salt and black pepper to taste

    Place the bulgur wheat in a small heatproof bowl and pour the boiling water over it.

    In a large mixing bowl, combine the chopped parsley, mint, tomatoes, cucumber, and green onions.

    Add the cooled bulgur wheat to the vegetables.
