This salad is one of my favorite ways to brighten up a lunch or serve as a side dish at dinner. The combination of sweet oranges and buttery avocado creates a wonderful texture that feels fancy but is actually very simple to put together.

My top tip is to supreme your citrus fruits, which just means cutting the segments out of their membranes. It makes every bite much smoother and ensures you do not get any bitter white pith in your salad.

Ingredients

  • 2 large oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1 ripe avocado, sliced
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon fresh orange zest
  • A pinch of salt and black pepper

Instructions

    Whisk the olive oil, honey, orange zest, salt, and pepper together in a small bowl to make the dressing.

    Arrange the orange and grapefruit segments on a large serving platter.

    Gently tuck the avocado slices in between the citrus segments.

    Drizzle the prepared dressing evenly over the fruit.

    Scatter the chopped pistachios over the top right before serving.

Serve this salad immediately so the avocado stays fresh and green. If you need to store it, keep the dressing separate and add it right before you eat to prevent the fruit from becoming too watery.
