This salad has become a favorite in my kitchen because it is so incredibly easy to pull together on a busy weeknight. It packs in plenty of texture and flavor, making it a perfect light dinner or a fantastic side dish for any gathering.

My top tip for this recipe is to let the salad sit in the fridge for about twenty minutes before serving. This gives the dressing a chance to soak into the couscous and really brings all those lovely flavors together.

Ingredients

  • 1 cup dry couscous
  • 1 cup boiling water
  • 1 large cucumber, diced
  • 1 can chickpeas, rinsed and drained
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

    Place the dry couscous in a heatproof bowl and pour the boiling water over it.

    Cover the bowl with a plate or plastic wrap and let it sit for five minutes until the water is absorbed.

    Fluff the couscous with a fork and let it cool down slightly.

    In a large mixing bowl, combine the fluffed couscous with the diced cucumber, chickpeas, feta, and red onion.

    In a small jar or bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.

    Pour the dressing over the salad and toss everything gently until well coated.

    Serve immediately or chill in the refrigerator until you are ready to eat.

You can store leftovers in an airtight container in the fridge for up to two days. If you like extra flavor, feel free to toss in some chopped fresh parsley or kalamata olives before serving.
