When the weather gets hot, the last thing I want is a wilted bowl of lettuce. This chopped salad is my favorite solution for summer meals because the veggies stay firm and crunchy even after you dress them. It is so easy to prep ahead of time and keeps well in the fridge for a quick lunch.

Since there are no greens to worry about, you can use whatever firm vegetables you have on hand. My biggest tip is to chop everything into uniform, bite sized pieces so you get a little bit of every flavor in each spoonful.

Ingredients

  • 2 cups diced cucumber
  • 2 cups diced tomatoes
  • 1 cup diced red bell pepper
  • 1 cup cooked chickpeas
  • 1/2 cup diced red onion
  • 1/4 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

    Place the diced cucumber, tomatoes, bell pepper, chickpeas, and red onion into a large mixing bowl.

    In a small jar or bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.

    Pour the dressing over the vegetables and toss everything until well combined.

    Gently fold in the crumbled feta cheese right before you are ready to serve.

    Taste and add extra salt or pepper if you think it needs a bit more seasoning.

You can store this in an airtight container in the fridge for up to two days. It tastes even better once the flavors have had a chance to mingle for an hour. Serve this alongside grilled chicken for a complete meal.
