There is something about fresh corn that just tastes like sunshine. This salad is one of my absolute favorites because it is light, colorful, and packs a nice crunch alongside creamy feta cheese and fresh herbs.

It is so easy to pull together for a last minute picnic or a quick dinner side. If you want to take it up a notch, charring the corn in a hot skillet before mixing it in gives the salad a wonderful smoky flavor.

Ingredients

  • 4 cups corn kernels, fresh or canned and drained
  • 1 red bell pepper, finely diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste

Instructions

    If you are using fresh corn, cut the kernels off the cob or use canned corn that has been well drained.

    In a large mixing bowl, combine the corn, diced red bell pepper, and chopped red onion.

    In a small jar or bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper.

    Pour the dressing over the corn mixture and toss gently to coat everything evenly.

    Fold in the crumbled feta cheese and fresh cilantro right before serving so the cheese stays nice and chunky.

    Taste and add more salt or lime juice if you feel like it needs a little extra brightness.
