June is my favorite time of year because the gardens are finally full of fresh produce. I love making this salad whenever the days get warmer because it feels light and crisp on the palate.

My biggest tip is to use the freshest greens you can find at your local farmers market. Everything tastes better when it has been picked that same morning.

Ingredients

  • 4 cups mixed baby greens
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

    Wash and dry your salad greens thoroughly so the dressing clings to the leaves.

    Place the greens in a large bowl and add the cherry tomatoes, cucumber, and red onion.

    In a small jar, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.

    Pour the dressing over the salad just before you are ready to serve.

    Toss everything gently, top with the crumbled feta, and serve immediately.

If you are taking this to a picnic, keep the dressing in a separate container and add it right before eating to keep the leaves crisp. You can store leftover salad in the fridge for a day, but it is best enjoyed fresh.
