This Greek quinoa salad is one of my favorite ways to get a healthy lunch on the table without any fuss. It is packed with fresh ingredients like crisp cucumbers and juicy tomatoes, making it a perfect choice for warm days or potluck gatherings.

I love how the quinoa soaks up all that tangy lemon dressing. If you have extra time, let the salad sit in the fridge for an hour before serving because it tastes even better once the flavors have a chance to mingle.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

    Combine the quinoa and water in a medium saucepan, bring to a boil, then cover and reduce the heat to low.

    Simmer for about 15 minutes or until the water is absorbed, then remove from the heat and let it cool completely.

    Whisk together the olive oil, lemon juice, garlic, and oregano in a small bowl to create the dressing.

    Place the cooled quinoa in a large mixing bowl and add the tomatoes, cucumber, onion, olives, and parsley.
