My favorite thing about this recipe is how well the flavors meld together after sitting in the fridge. If you are making this for a potluck, try to prepare it an hour ahead of time so the lemon dressing can really soak into the pasta.

Ingredients

  • 16 ounces orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup English cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions
