There is nothing quite like a crisp slaw to brighten up a heavy meal. This Mexican style slaw is a staple in my kitchen because it is so easy to pull together, and the combination of creamy dressing with fresh lime is always a hit with my family.

My biggest tip for this recipe is to slice your cabbage as thinly as you can. If you want to save time, you can even use a mandoline or your food processor to get those perfect ribbons that soak up all the tangy dressing.

Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/2 cup sour cream or Mexican crema
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. 1

Place the shredded green and red cabbage into a large mixing bowl.

  2. 2

In a separate small bowl, whisk together the sour cream, lime juice, minced garlic, cumin, salt, and pepper until smooth.

  3. 3

Pour the dressing over the cabbage.

  4. 4

Toss everything well so the cabbage is evenly coated.

  5. 5

Let the slaw sit in the refrigerator for at least 15 minutes before serving so the flavors have a chance to meld together.

πŸ’‘ Tips

Store any leftovers in an airtight container in the fridge for up to two days. This slaw is perfect served alongside fish tacos or grilled chicken. If you like a little heat, add a pinch of chili powder or some finely diced jalapeΓ±o to the dressing.
