Fresh Mint Chimichurri Sauce
This zesty and bright sauce is a wonderful way to use up fresh mint from the garden and pairs perfectly with grilled meats or veggies.
dailyrecipesbook.comMost of us think of parsley when we hear the word chimichurri, but using fresh mint adds a special coolness that works so well with summer meals. It is incredibly quick to whip up and brings a burst of flavor to anything from grilled chicken and salmon to a simple bowl of roasted potatoes.
The secret here is a little trick where you dissolve the salt in warm water before adding the rest of the ingredients. It helps the seasoning blend perfectly through the oil and vinegar. If you are using store bought mint and find it a bit pricey, feel free to mix in some flat leaf parsley to stretch it further.
Ingredients
- 1 1/2 tablespoons warm water
- 1/2 teaspoon kosher salt
- 3 cloves garlic, finely minced
- 1/2 cup fresh mint leaves, very finely chopped
- 1/8 teaspoon red pepper flakes
- 1 1/2 tablespoons red wine vinegar
- 3 tablespoons extra virgin olive oil
Instructions
- 1
In a small mixing bowl, combine the warm water and salt.
- 2
Stir these together until the salt is completely dissolved.
- 3
Finely mince your garlic and chop the mint leaves until they are very small.
- 4
Add the garlic, mint, red pepper flakes, red wine vinegar, and olive oil to the salt water.
- 5
Stir everything well to combine all the flavors.
- 6
Taste your sauce and add a few more red pepper flakes if you want a bit more heat.
๐ก Tips
Keep this sauce in a sealed jar in the fridge for up to one week. Since the olive oil will firm up when cold, let it sit on the counter for about 15 minutes before you plan to eat so it can liquefy again.
