This quinoa corn salad is one of my favorite go to recipes when I need something quick, healthy, and filling. It is packed with protein from the quinoa and black beans, plus plenty of fresh textures that make every bite exciting.

I love making this for potlucks or as a simple meal prep lunch for the week. The chipotle lime dressing really ties everything together, so be sure to taste it before pouring it over the salad to adjust the spice level to your liking.

Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels, fresh or canned
  • 1 ripe avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely diced
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1/2 teaspoon chipotle powder
  • Salt and pepper to taste

Instructions

    Rinse the quinoa under cold water using a fine mesh strainer.

    Combine quinoa and water in a medium pot. Bring to a boil, then cover and reduce heat to low. Simmer for about 15 minutes or until the water is absorbed.

    Remove the quinoa from the heat and let it sit covered for 5 minutes before fluffing it with a fork. Let it cool to room temperature.

    In a small jar or bowl, whisk together the olive oil, lime juice, chipotle powder, salt, and pepper to make the dressing.

    In a large bowl, combine the cooked quinoa, black beans, corn, red onion, and cilantro.

    Pour the dressing over the salad and toss gently to coat everything.

    Add the diced avocado last and fold it in carefully so it does not get mushy.

Store this salad in an airtight container in the fridge for up to three days. If you plan to make it ahead of time, wait to add the avocado until just before you are ready to serve so it stays fresh and green.
