There is something so satisfying about turning simple carrots into beautiful ribbons. This salad is a regular favorite at my house because it looks impressive but comes together in just a few minutes.

The bright lemon and Dijon dressing really makes the carrots pop. If you have extra time, let the carrots sit in the dressing for ten minutes before you serve them so the flavors can really settle in.

Ingredients

  • 4 large carrots, peeled and shaved into ribbons
  • 1/3 cup toasted pistachios, roughly chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and black pepper to taste

Instructions

    Use a vegetable peeler to shave the carrots into long, thin ribbons and place them in a large mixing bowl.

    In a small jar or bowl, whisk together the olive oil, lemon juice, Dijon mustard, and honey until smooth.

    Drizzle the dressing over the carrot ribbons and toss them gently with your hands or tongs to coat evenly.

    Sprinkle the chopped pistachios and fresh parsley over the top.

    Season with a pinch of salt and pepper before serving immediately.

Store any leftover salad in an airtight container in the fridge for up to two days. If you want to make this ahead of time, keep the pistachios separate and add them right before serving to keep them crunchy.
