This salad is one of my favorite ways to enjoy the flavors of a spring roll without all the work of wrapping them up. It is light, crunchy, and perfect for those warm days when you want something satisfying but not too heavy.

The secret is the creamy peanut dressing that brings everything together. To keep the noodles from sticking, give them a quick rinse under cold water after boiling and toss them with a tiny bit of sesame oil.

Ingredients

  • 8 oz rice vermicelli noodles
  • 1 cup shredded carrots
  • 1 large cucumber, sliced into thin matchsticks
  • 1 red bell pepper, thinly sliced
  • 1 ripe mango, peeled and sliced into strips
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, torn
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons warm water

Instructions

    Cook the rice noodles according to the package directions, then drain them and rinse under cold water to stop the cooking.

    In a small mixing bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and grated ginger.

    Slowly stir in the warm water a little at a time until the dressing is smooth and easy to pour.

    Place the chilled noodles in a large serving bowl and arrange the carrots, cucumber, bell pepper, and mango on top.

    Drizzle the peanut dressing over the ingredients and toss everything gently so the noodles are well coated.

    Garnish with the fresh cilantro and mint leaves right before you serve it.

Store any leftovers in an airtight container in the fridge for up to two days. If the dressing thickens too much while sitting, just add a tiny splash of water and stir it well before serving.
