There is something so special about a salad that actually leaves you feeling full and satisfied. This recipe hits all the right notes with crunchy cucumbers, creamy avocado, and sweet corn. It has become a staple in my kitchen for busy weeknights when we want something nutritious but delicious.

My best tip for this salad is to let your steak rest for at least five minutes before you slice it. This keeps all those tasty juices inside the meat rather than on your cutting board. It really makes a difference in the final texture of the steak.

Ingredients

  • 1 pound flank or sirloin steak
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cups mixed salad greens
  • 1 cup corn kernels, fresh or canned
  • 1 cucumber, diced
  • 1 ripe avocado, sliced
  • 1 jalapeño, seeded and thinly sliced
  • 3 tablespoons olive oil for dressing
  • 2 tablespoons lime juice
  • 1 tablespoon honey

Instructions

  1. 1

Season the steak generously with salt and pepper on both sides.

  2. 2

Heat the olive oil in a large skillet over medium high heat.

  3. 3

Sear the steak for 4 to 6 minutes per side depending on your preferred level of doneness.

  4. 4

Remove the steak from the pan and let it rest on a plate for 5 to 10 minutes before slicing it into thin strips.

  5. 5

In a small jar or bowl, whisk together the dressing ingredients consisting of olive oil, lime juice, and honey.

  6. 6

Divide the mixed greens into bowls and top with corn, cucumber, avocado, and jalapeño slices.

  7. 7

Place the sliced steak on top of each salad.

  8. 8

Drizzle the honey lime dressing over the salads right before you serve them.

💡 Tips

Store the dressing separately from the salad if you plan on having leftovers to keep the greens from wilting. This salad also tastes great topped with a little crumbled feta or goat cheese if you want extra flavor.
