This salad is a staple in my kitchen whenever the weather warms up. It brings together sweet peaches, crunchy corn, and cool cucumbers for a mix of textures that feels like summer in a bowl.

Ingredients

  • 1 cup dry couscous
  • 1 cup vegetable broth
  • 2 ripe peaches, diced
  • 1 cup sweet corn kernels

  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
