There is something truly special about shopping at the farmers market when summer produce is at its peak. I love grabbing whatever looks brightest and freshest to toss into a big bowl for an easy lunch or dinner side.

This salad is all about celebrating simple ingredients. My best tip is to wash and dry your greens really well before assembling so your dressing sticks perfectly to every leaf.

Ingredients

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

    Wash and dry your greens thoroughly, then place them into a large serving bowl.
