This winter salad is one of my favorite things to make when the weather gets cold because it feels so bright and fresh. It combines sweet fruits with tangy cranberries and crunchy pecans for a mix of textures that keeps everyone coming back for seconds.

I love serving this at holiday gatherings or just as a quick side dish during the week. A quick tip is to toast your pecans in a dry pan for a few minutes before adding them to the salad because it brings out a lovely nutty aroma.

Ingredients

  • 5 cups mixed salad greens
  • 1 cup fresh pomegranate seeds or sliced pears
  • 1/2 cup dried cranberries
  • 1/2 cup toasted pecan halves
  • 1/4 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

    In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until the dressing is smooth.

    Place your salad greens in a large serving bowl.

    Top the greens with the pomegranate seeds or pear slices, dried cranberries, toasted pecans, and feta cheese.
