There is something so special about the way cherry tomatoes burst and turn sweet in the oven. When you toss them with pasta, salty prosciutto, and a bit of creamy burrata, you get a meal that feels like a warm hug at the end of a busy day.

This recipe is a favorite in my house during the late summer months when the garden is full of tomatoes. It is simple enough for a Tuesday night but fancy enough to serve when friends stop by for a casual dinner.

Ingredients

  • 2 cups cherry tomatoes
  • 4 cloves garlic, smashed
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 4 slices prosciutto, torn into pieces
  • 12 ounces spaghetti
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1 ball of fresh burrata cheese
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the cherry tomatoes and smashed garlic cloves on a baking sheet, drizzle with olive oil, sprinkle with oregano, salt, and pepper, then roast for about 20 minutes until the tomatoes are soft.

    While the tomatoes roast, cook the spaghetti in a large pot of salted boiling water according to the package directions. Reserve half a cup of pasta water before draining.

    In a small skillet, crisp the prosciutto pieces over medium heat until they are nice and crunchy, then set them aside.

    In a small bowl, whisk together the eggs and grated Parmesan cheese until smooth.

    Add the hot pasta to the baking sheet with the roasted tomatoes, tossing everything together gently. Remove from the oven.

    Pour the egg and cheese mixture over the hot pasta, tossing quickly so the heat of the noodles creates a creamy sauce without scrambling the eggs. Add a splash of the reserved pasta water if you need to thin the sauce.

    Top the pasta with the crispy prosciutto and a fresh ball of burrata, then garnish with plenty of fresh basil.

💡 Tips

If you have leftovers, store them in an airtight container in the fridge for up to two days. Gently reheat the pasta with a tiny splash of water to keep the sauce from getting too thick. This dish is best served immediately while the burrata is soft and creamy.
