Hearty Cowboy Soup
This comforting bowl is a perfect mix of chili and vegetable soup that will keep everyone full and happy.
dailyrecipesbook.comCowboy Soup is a true classic in my kitchen. It is one of those meals that feels like a big hug in a bowl, especially on those chilly nights when you need something substantial to warm you up. It is thick, filling, and packed with everything good.
I love this recipe because it is so easy to adjust based on what you have in your pantry. If you have extra corn or some bell peppers, feel free to toss them in. My best tip is to let the soup simmer for a little longer if you have the time, as it really helps the potatoes soak up all that savory broth.
Ingredients
- 1 pound lean ground beef
- 1 large onion, diced
- 2 cloves garlic, minced
- 3 large russet potatoes, peeled and cubed
- 2 cans pinto beans, rinsed and drained
- 1 can diced tomatoes
- 1 can corn, drained
- 4 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- Salt and black pepper to taste
- 1 tablespoon vegetable oil
Instructions
- 1
Heat the vegetable oil in a large pot or Dutch oven over medium heat.
- 2
Add the ground beef and cook until it is browned, breaking it apart with a spoon as it cooks.
- 3
Stir in the onion and garlic, cooking until the onion becomes soft and translucent.
- 4
Add the cubed potatoes, beef broth, tomatoes, chili powder, and cumin to the pot.
- 5
Bring the mixture to a boil, then turn the heat down to low and cover.
- 6
Let the soup simmer for about 20 minutes, or until the potatoes are tender when pierced with a fork.
- 7
Stir in the drained beans and corn and cook for another 5 minutes until heated through.
- 8
Taste your soup and add salt and pepper as needed before serving warm.
💡 Tips
This soup tastes even better the next day after the flavors have had time to settle in the fridge. Store leftovers in an airtight container for up to four days. You can serve this with a side of warm cornbread or a sprinkle of cheddar cheese on top.
