Ingredients

  • 1 head iceberg lettuce, cut into 4 wedges
  • 1 can (15 ounces) chickpeas, drained and patted dry
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 cup crumbled feta cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons olive oil for the dressing
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
