This grilled chicken and chickpea salad is one of my favorite ways to pack more protein into a light meal. It feels fresh and crisp, making it a wonderful choice for a warm afternoon when you want something healthy but filling.

I love this dish because you can easily swap the veggies based on what you have in your fridge. If you have extra zucchini or bell peppers on hand, feel free to toss them in the pan with the chicken for even more flavor.

Ingredients

  • 2 large chicken breasts
  • 1 can chickpeas, rinsed and drained
  • 1 zucchini, sliced
  • 2 cups baby spinach
  • 1 red bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. 1

Season the chicken breasts with salt, pepper, and half of the oregano.

  2. 2

Heat a tablespoon of olive oil in a grill pan over medium high heat.

  3. 3

Cook the chicken for about 6 to 7 minutes per side until it is cooked through, then set it aside to rest.

  4. 4

In the same pan, add the sliced zucchini and cook until tender and slightly charred.

  5. 5

In a large bowl, combine the spinach, drained chickpeas, and chopped red bell pepper.

  6. 6

Slice the chicken into strips and add it to the bowl along with the grilled zucchini.

  7. 7

Drizzle the remaining olive oil and lemon juice over the top, sprinkle with the rest of the oregano, and toss everything gently to combine.

๐Ÿ’ก Tips

This salad keeps well in the fridge for up to two days if you store the dressing separately. If you are packing this for lunch, keep the spinach in a separate container so it stays crisp until you are ready to eat.
