If you love green beans but are tired of them just being steamed or boiled, you have to try them on the grill. The high heat gives them a beautiful char and a slightly smoky flavor that pairs perfectly with the salty bite of feta cheese and fresh herbs.

This salad is wonderful because it does not require any lettuce, which means it stays crunchy even if you take it to a picnic or a potluck. A quick tip is to use a grill basket so you do not have to worry about the beans falling through the grates of your grill.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh chives, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. 1

Preheat your grill to medium high heat.

  2. 2

Toss the trimmed green beans in a bowl with the olive oil, salt, and black pepper until they are evenly coated.

  3. 3

Place the green beans into a grill basket and cook for about 5 to 7 minutes, shaking the basket occasionally, until they are tender and have nice char marks.

  4. 4

Remove the beans from the grill and place them in a large serving bowl.

  5. 5

Immediately toss the warm beans with the lemon juice, lemon zest, fresh dill, and chives.

  6. 6

Top the salad with the crumbled feta cheese and serve warm or at room temperature.

๐Ÿ’ก Tips

This salad tastes best when served fresh, but you can store any leftovers in an airtight container in the fridge for up to two days. If you want a little extra texture, try adding a handful of toasted slivered almonds on top just before serving.
