Hearty and Simple Cabbage Soup

I love making a big batch on Sunday because it tastes even better the next day. If you want to add a bit more protein, a can of white beans or some cooked sausage works wonders in this broth.
Ingredients
- 1 head of cabbage, chopped
- 2 large carrots, shredded
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 6 cups vegetable or chicken broth
- 1 teaspoon dried Italian herbs
- 1 bay leaf
- 2 tablespoons olive oil
- Salt and black pepper to taste

Heat the olive oil in a large pot or Dutch oven over medium heat.

💡 Tips
Store any leftovers in an airtight container in the fridge for up to four days. If you find the soup gets too thick in the fridge, just add a splash of water or extra broth when you reheat it on the stove.
