Sopa de fideo is such a nostalgic favorite in my house. It uses thin noodles toasted in oil until they are golden brown, which gives the soup a beautiful nutty flavor that is hard to beat.

I love keeping this recipe simple with a quick blended tomato base, but it is also a perfect canvas for leftovers. You can easily stir in some shredded chicken or beans to make it a heartier meal for a busy weeknight.

Ingredients

  • 7 ounces fideo noodles or thin vermicelli broken into small pieces
  • 2 tablespoons vegetable oil
  • 3 Roma tomatoes
  • 2 cloves garlic
  • 1/2 white onion
  • 4 cups chicken or vegetable broth
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • Lime wedges for serving

Instructions

    Place the tomatoes, garlic, onion, and a splash of broth into a blender. Process until the mixture is completely smooth.

    Heat the oil in a large pot over medium heat. Add the dry noodles and toast them, stirring constantly, until they turn a deep golden brown.

    Pour the blended tomato mixture into the pot with the noodles and cook for about 2 minutes to let the flavors develop.

    Add the remaining broth and the chopped cilantro. Bring the soup to a gentle boil.

Store any leftovers in an airtight container in the fridge for up to three days. Keep in mind that the noodles will continue to soak up the broth, so you may want to add a little extra water or stock when reheating.
