Homemade Berry Chantilly Cake
A delightful copycat of the famous bakery cake featuring fluffy layers, fresh berries, and light mascarpone cream.
This cake is a true crowd favorite because it balances light, spongey layers with a rich and tangy fruit filling. It is the perfect dessert for sunny afternoons, birthdays, or any time you want to impress your guests with something that looks like it came from a professional shop.
My best advice for success is to make sure your berries are completely dry before adding them to the cake. If they are wet, the cream can slide around, so pat them down with a paper towel right after you wash them.
Ingredients
- 2 1/4 cups cake flour
- 1 1/2 cups granulated sugar
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup softened unsalted butter
- 1 cup whole milk
- 1 tablespoon vanilla extract
- 4 large egg whites
- 8 ounces mascarpone cheese, softened
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 2 cups heavy whipping cream
- 2 cups fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit and grease two 9 inch round cake pans.
- 2
Whisk the flour, sugar, baking powder, and salt together in a large bowl.
- 3
Add the butter, milk, and vanilla, then beat on medium speed until smooth.
- 4
In a separate bowl, whip the egg whites until stiff peaks form, then gently fold them into the cake batter.
- 5
Divide the batter between the prepared pans and bake for 25 to 30 minutes, or until a toothpick comes out clean.
- 6
While the cakes cool, beat the mascarpone, cream cheese, and powdered sugar until smooth.
- 7
In a different bowl, whip the heavy cream until stiff, then fold it into the cheese mixture.
- 8
Place one cake layer on a plate, spread with a layer of cream, and top with a generous portion of mixed berries.
- 9
Add the second cake layer, frost the top and sides, and decorate with the remaining fresh berries.
๐ก Tips
Store any leftovers in the refrigerator to keep the cream fresh and stable. This cake is actually easier to slice if you let it chill for an hour before serving. You can also toast some almond slivers to press into the sides for extra texture.
