Classic French Raspberry Tartlets

Ingredients
- 125g unsalted butter, softened
- 125g caster sugar
- 125g almond meal
- 2 large eggs, room temperature
- 2 cups fresh raspberries
- 2 tablespoons apricot jam, warmed and strained for glaze
- 1 tablespoon finely chopped pistachios
- 1 batch of prepared tartlet crust shells

Preheat your oven to 180C.

In a mixing bowl, use an electric beater on low speed to cream the softened butter and sugar until the mixture is smooth and pale.

Add the almond meal to the butter mixture and mix until well combined.

Add the eggs one at a time, beating well after each addition until the mixture is fully incorporated and creamy.

Spoon the almond cream into your prepared tartlet shells, filling them about three quarters of the way full.

Press fresh raspberries gently into the top of the almond cream.

Bake the tartlets in the preheated oven for 20 to 25 minutes, or until the almond cream is puffed and golden.

Remove from the oven and let them cool completely.

Brush the tops of the berries with a little warmed apricot jam for a glossy finish and sprinkle with chopped pistachios if desired.
